A Postcard from Bharat

Life here moves at its own sweet pace. We find joy in sitting under the neem tree, sharing stories and laughter. We stretch out on the khaat, soaking in the warm sun. We enjoy eating rotis fresh off the chulha, paired with chutneys ground on the sil-batta. Our big glass of chach or lassi keeps us refreshed and full of life. This is us. This is life in Bharat; simple and joyful.

Frequently Ask Question

What is cold pressed mustard oil?

Cold-pressed mustard oil is oil pressed from mustard seeds mechanically, at low temperature, without heat treatment or chemical solvents. Ours is wood-pressed and cold-pressed in a kolhu, and the label describes it as raw and unrefined.

Is cold-pressed mustard oil the same as kachi ghani mustard oil?

Yes. Both terms describe the same method. "Cold pressed" means the oil is extracted mechanically without heat or chemical solvents, and "kachi ghani" is the traditional Hindi name for pressing seeds in a wooden or stone ghani at low temperature.

Is this pure mustard oil?

The ingredients list names only cold-pressed mustard oil, free from argemone oil, with no preservatives. In 2021, the Food Safety and Standards Authority of India also prohibited the manufacture and sale of blended mustard oil.

Why is mustard oil heated before cooking?

Raw mustard oil has a very sharp pungency. Heating it until it smokes lightly and then letting it cool a little softens that raw bite and brings out a warmer flavour, which is why the step is standard in many Indian kitchens.

What about erucic acid in mustard oil?

Erucic acid is a fatty acid found naturally in mustard seeds. A report archived on the FSSAI website notes that conventional rapeseed-mustard oil contains around 40 to 50 per cent erucic acid, and that some countries do not allow rapeseed-mustard oil above 2 per cent for eating. Mustard oil remains a permitted cooking oil in India. If you have specific health concerns, speak to your doctor.
